かくしぼうちょう【隠し包丁】

〔食材に目立たぬように切れ目を入れること〕 (light) scoring.

●肉は焼く前に隠し包丁を入れておくと, お年寄りにも食べやすいでしょう. If you score the meat (lightly) before cooking it, it will be easier for elderly people to eat.
